Basil

Greek Bush, Dark Opal, Lettuce Leaf, Sweet Lemon, Holy, Neopolitan, Cinnamon, Licorice Scented, Red Ball, Spicy Globe, Genovese, Thai, Red Rubin. Basil is truly an incredible herb. It is enjoyed for its rich and spicy, mildly peppery flavor with a trace of mint and clove. Basil is an annual herb belonging to the mint family, Lamiaceae (Labiatae) and like others in this family, basil can be identified by its square, hairy stems. There are over 40 known varieties of basil of which Ocimum basilicum or Sweet Basil is the most commonly known and grown. Ocimum is from a Greek verb that means "to be fragrant." The foliage is easily bruised; just brushing against its foliage releases its wonderfully spicy fragrance. Varieties can grow to a height of 2 1/2 feet and are about as wide. Foliage colors range from pale to deep green, vivid purple and even purple laced with goldish yellow foliage. Texture varies from silky and shiny to dull and crinkly. Flowers appear in summer as whorls on the ends of branches and are either white or lavender. Some of the unusual fragrances and flavors include: cinnamon, lemon and anise. Basil is native to India and Asia having been cultivated there for more than 5,000 years. It is grown there as a perennial in those warm, tropical climates.

Borage

Borage, Borago officinalis, is a gangly, airy plant growing up to about 2 1/2' high and about 2' wide. The leaves are wrinkled, long ovals, covered with prickly little hairs. The leaves are in clumps at the base. The flower clusters sit atop long hollow prickly stems which come out of the leave base. The flowers themselves droop, as if in need of water. All in all, borage sounds like an unattractive weed. Until you come to the flower itself. The heat of summer brings it out and abruptly this ugly duckling plant is covered with the most vibrant, star-shaped blue flowers.

Coriander

Description: A dual purpose annual herb grown for its seeds or fresh young leaves. The seeds are delicious in cakes and when crushed, add an orangey flavour to meat dishes. The young leaves are often called 'Cilantro'; finely chop and add to chicken soup to give it a Latin touch or soak the crushed seeds in hot water and add the liquid only to cubes of pork simmering in tomatoes for a real Mexican flavour. Height 90cm (3ft). They prefer full sun and ordinary garden soil. Harvest the young green leaves sparingly once the seedlings are 15cm (6in) tall and for seed, pull off the seed heads when they become brown but don't leave them too long on the plant or they will disperse themselves. An excellent herb for slightly shaded areas.

Fennel: Bronze, Sweet, Bulbing

Fennel, a hardy, perennial, umbelliferous herb, with yellow flowers and feathery leaves, grows wild in most parts of temperate Europe, but is generally considered indigenous to the shores of the Mediterranean, whence it spreads eastwards to India. It has followed civilization, especially where Italians have colonized, and may be found growing wild in many parts of the world upon dry soils near the sea-coast and upon river-banks. It flourishes particularly on limestone soils and is now naturalized in some parts of this country, being found from North Wales southward and eastward to Kent, being most frequent in Devon and Cornwall and on chalk cliffs near the sea. It is often found in chalky districts inland in a semi-wild state.

Marigold, Lemon Gem

The marigold is an immensely popular warm season annual, and rightly so, because it has many positive qualities and few potential problems. No other plant is faster or easier to grow. Flowers are produced over a long period of time and are long lasting when used as a cut flower. There is a whole spectrum of interesting and different cultivars from which to choose.

Nasturtium

Nasturtiums are an attractive and nutritious addition to salads, and they make a beautiful garnish. Nasturtiums have 10 times the vitamin C of lettuce, so add a gererous portion of leaves and flowers to your salad mixes. Grind the seeds in a pepper mill, and use as you would black pepper.
